Local Roots!

Even in the middle of the winter, Oregon farmers provide.  Many people aren’t sure how to use root vegetables although they are quite versatile.  Think of how you cook potatoes; you can use any of these roots in much the same way.

One of the simplest things is roasting–scrub the roots clean with a vegetable brush, cube, toss in oil, salt and pepper to taste, and roast uncovered on a baking tray at 375 degrees for 25 to 35 minutes, stirring a few times throughout.

Even simpler, try grating raw beets and tossing with a citrus vinaigrette and some chopped walnuts and blue cheese.  Delicious winter salad!
